1. In a medium saucepan, combine the rinsed millet, coconut milk, water, sugar, vanilla extract, and salt. Bring to a gentle boil over medium heat, then lower the heat and cook partially covered for 18-20 minutes, until the millet is tender and creamy. Stir 2 or 3 times to prevent sticking.
- 2
2. While the millet cooks, preheat the oven to 180 °C / 350 °F. Spread the shredded coconut on a small baking tray and toast for 4-6 minutes, stirring halfway through, until golden. Set aside.

3. Heat a wide skillet over medium heat. Add the butter and, once melted, add the pineapple, brown sugar, ground ginger, and 15 ml (1 tbsp) lime juice. Cook for 6-8 minutes, stirring occasionally, until the pineapple is glossy, tender, and lightly caramelized. Remove from the heat and let it cool slightly.

4. In a bowl, mix the Greek yogurt with the lime zest and the remaining 15 ml (1 tbsp) lime juice.

5. In another chilled bowl, whip the heavy cream with the powdered sugar to soft peaks. Fold it into the yogurt mixture to create a light coconut-lime cloud.
- 6
6. When the millet is ready, let it rest for 3 minutes. If it thickens too much, stir it vigorously to bring back a creamy texture.
- 7
7. Assemble the cups: divide a layer of warm millet among 6 glasses or dessert cups, add a layer of caramelized pineapple, top with a generous spoonful of the yogurt cream, and finish with the toasted coconut.

8. Serve immediately while the millet and pineapple are still warm and the cream is cool for the best contrast of temperatures and textures.
Chef tips
For a more elegant presentation, serve in clear glasses and add a little extra lime zest just before serving. Do not overcook the pineapple so it keeps its shape.
Substitutions
You can substitute the pineapple with firm mango. Greek yogurt can be replaced with thick plain yogurt, and the butter with coconut oil for a more tropical profile.
