Instructions

1. Preheat the oven to 220 °C / 425 °F and line a baking sheet with parchment paper. Brush the paper with 1/2 tablespoon of the olive oil.
- 2
2. In a large bowl, mash the white beans with a fork or potato masher until you have a paste with some texture. Add the ground oats, grated Parmesan, beaten egg, 1 tablespoon of the olive oil, chopped rosemary, garlic powder, half of the lemon zest, salt, and black pepper.
- 3
3. Mix well until a thick, shapeable dough forms. If it feels too wet, let it rest for 2 minutes so the oats can absorb some moisture.
- 4
4. Divide the mixture into 12 portions and shape them into rounds about 2 inches wide on the baking sheet. Flatten them slightly and brush the tops with the remaining oil.
- 5
5. Bake for 20 to 22 minutes at 220 °C / 425 °F, flipping the rounds halfway through, until the edges are golden and the crisps feel firm.
- 6
6. While they bake, make the cream: in a small bowl combine the Greek yogurt, chopped green olives, lemon juice, chopped chives, and the remaining lemon zest. Stir until evenly mixed.
- 7
7. Taste the cream and adjust with salt and pepper if needed. Chill until ready to serve.
- 8
8. Serve the crisps hot or warm with the green olive lemon cream on top or on the side, finishing with a little extra chives if desired.
Chef tips
For a crispier finish, let the rounds rest on the tray for 3 minutes after baking. If you want a smoother texture, process the beans before mixing, but do not puree them completely.
Substitutions
You can replace the Parmesan with a similar vegetarian aged cheese. Rosemary can be swapped for fresh thyme. If you do not have chives, use a small amount of chopped parsley in the cream.
