Instructions
- 1
Preheat the oven to 220 °C / 425 °F and lightly grease a baking tray or line it with parchment brushed with a little olive oil.
- 2
Place the finely chopped Brussels sprouts in a large bowl and mix them with the shredded Gouda, breadcrumbs, beaten egg, red onion, garlic, half of the fresh dill, 1/2 teaspoon salt, black pepper, and olive oil.
- 3
Mix very well until you have a moist, compact mixture. Let it rest for 5 minutes so the breadcrumbs absorb some of the moisture from the Brussels sprouts and egg.
- 4
With lightly damp hands, shape 12 compact bites or small patties and place them on the prepared tray.
- 5
Bake for 16 to 18 minutes at 220 °C / 425 °F, turning once halfway through, until the bites are golden around the edges and crisp on the outside.
- 6
While they bake, make the dip by mixing the plain Greek yogurt, green apple, lemon juice, honey, the remaining fresh dill, and 1/4 teaspoon salt in a bowl.
- 7
Taste the dip and adjust the salt slightly if needed. Chill it until serving so the green apple and dill can flavor the yogurt.
- 8
Serve the Brussels sprout and Gouda bites hot and fresh with the cold green apple dill dip on the side.
Chef tips
For an even crispier exterior, let the chopped Brussels sprouts sit on paper towels for 5 minutes and gently press them before mixing. Do not make the bites too thick so they brown properly.
Substitutions
You can substitute the Gouda with Edam or mild cheddar. Dill can be replaced with fresh chives. If you do not have green apple, use firm pear for a softer dip.
