Instructions

  1. 1

In a bowl, combine the flaked cornmeal for cuscuz with the water and 1 teaspoon of salt. Mix with a fork, then let it rest for 10 minutes so it hydrates and develops an even sandy texture.

  2. 2

Meanwhile, season the shrimp with 1 tablespoon of lime juice, half of the minced garlic, 1/2 teaspoon of salt, and the black pepper. Refrigerate for 10 minutes.

  3. 3

Place the shredded coconut in a dry skillet over medium heat and toast for 2 to 3 minutes, stirring constantly, until golden. Remove from the pan and set aside.

  4. 4

Transfer the hydrated cuscuz mixture to a steamer or cuscuz pan without packing it too tightly. Steam for 8 to 10 minutes until tender and cooked through. Turn off the heat, fluff gently with a fork, and keep covered to stay warm.

  5. 5

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add half of the onion and the remaining garlic; sauté for 2 to 3 minutes until fragrant.

  6. 6

Add the corn and cook for 2 minutes. Pour in the coconut milk and let it simmer gently for 3 minutes so the corn softens and the sauce develops flavor.

  7. 7

Add the seasoned shrimp and cook for 3 to 4 minutes, stirring, until pink and just cooked through. Stir in the butter, 2 tablespoons of chopped cilantro, and 1 additional tablespoon of lime juice. Adjust salt if needed.

  8. 8

For the warm vinaigrette, heat the remaining olive oil in another skillet over medium heat. Add the remaining onion and cook for 2 minutes. Add the tomatoes, white wine vinegar, sugar if using, and 1/4 teaspoon salt. Cook for 3 to 4 minutes until the tomatoes are warmed through but still hold some shape. Stir in the remaining cilantro and remove from the heat.

  9. 9

To serve, spoon a base of hot cuscuz onto each plate and shape it lightly. Top with the creamy shrimp and corn mixture, spoon over the warm tomato vinaigrette, and finish with the toasted coconut.

  10. 10

If you want to reheat the assembled dish, place it in an oven-safe dish at 300°F / 150°C for 8 to 10 minutes, just until warmed through; avoid overcooking the shrimp.

Chef tips

Properly hydrating the cornmeal before steaming is key to tender, not dry, cuscuz. Cook the shrimp only until they change color to keep them juicy.

Substitutions

You can substitute the shrimp with cubes of firm white fish, adjusting the cooking time. Butter can be replaced with more olive oil for a dairy-free version. If you do not have cilantro, use parsley, though the flavor will be less distinctly Brazilian.
