Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a small baking tray with parchment paper.
- 2
Toast the walnuts in a dry skillet over medium heat for 2 to 3 minutes, stirring, until fragrant. Remove and let them cool slightly.
- 3
In a bowl, mix the goat cheese with half of the toasted walnuts, black pepper, and sea salt until you have a creamy, textured filling.
- 4
Fill each date with about a teaspoon of the goat cheese mixture. Gently press to close without fully flattening them.
- 5
Place the stuffed dates on the tray, lightly brush them with olive oil, and bake for 6 to 8 minutes at 200 °C / 400 °F, until heated through and lightly golden at the edges.
- 6
While they bake, add the orange juice, orange zest, honey, and chopped rosemary to a small saucepan. Cook over medium-low heat for 2 to 4 minutes, until slightly reduced into a light glaze.
- 7
Remove the dates from the oven and transfer them to a serving platter. Spoon the warm orange glaze over the top.
- 8
Finish with the remaining toasted walnuts and, if desired, garnish with the small rosemary or parsley leaves. Serve warm.
Chef tips
For a cleaner, more elegant finish, use a piping bag or a zip bag with the corner snipped off to fill the dates. Do not overbake so the cheese stays creamy.
Substitutions
You can swap the walnuts for almonds or pistachios if you want a different profile; adjust allergens accordingly. Goat cheese can be replaced with thick cream cheese for a milder version. Honey can be replaced with maple syrup, though the final flavor will change.
