Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F. Place the seedless red grapes on a small baking tray and toss them with 1 tablespoon / 15 ml olive oil, honey, balsamic vinegar, a pinch of salt, and some black pepper. Roast for 12 minutes at 220 °C / 425 °F, until juicy and lightly caramelized.

  2. 2

While the grapes roast, heat a small skillet over medium heat. Add 1 teaspoon / 5 ml olive oil, the chopped garlic, black sesame seeds, and panko breadcrumbs. Toast for 2 to 3 minutes, stirring, until the panko is golden and crisp. Season with a pinch of salt and set aside.

  3. 3

Place the shelled edamame in a small saucepan of boiling water and cook for 3 minutes. Drain well and transfer to a blender or food processor.

  4. 4

Add the Greek yogurt, finely grated lemon zest, 2 tablespoons / 30 ml lemon juice, ground cumin, 2 teaspoons / 10 ml olive oil, 1/2 teaspoon salt, and black pepper to the edamame. Blend until thick and smooth. If needed, add 1 to 2 tablespoons of water to adjust the texture.

  5. 5

Heat a large skillet or grill pan over medium heat. Lightly brush the large Belgian endive leaves with the remaining olive oil and cook for 30 to 45 seconds per side, just until warm and lightly marked, without losing their shape. Sprinkle with a pinch of salt.

  6. 6

Arrange the warm endive leaves on a platter. Spoon about 1 tablespoon of edamame cream into each leaf, top with a few roasted grape halves, and finish with the black sesame crunch.

  7. 7

Sprinkle the fresh chives over the top and serve immediately to keep the contrast between the smooth cream, warm grapes, and crisp finish.

Chef tips

For a cleaner presentation, use a piping bag or a zip bag with the tip cut off to fill the endive leaves with the edamame cream. Roast the grapes just until they begin to wrinkle slightly; if overcooked, they will release too much liquid.

Substitutions

You can replace the Greek yogurt with unsweetened plant-based yogurt for a dairy-free version, though the dietary tags would change. Black sesame can be mixed with white sesame if preferred, and chives can be swapped for parsley or fresh dill.
