Instructions
- 1
Preheat the oven to 230 °C / 450 °F. Place a 24 to 26 cm (9 1/2 to 10 inch) oven-safe skillet or round pan inside with 1 tablespoon olive oil so it heats while you prepare the batter.
- 2
In a bowl, whisk the chickpea flour with the water until smooth and lump-free. Add 1 tablespoon olive oil, 3/4 teaspoon salt, black pepper, and the chopped rosemary. Let the mixture rest for 10 minutes.
- 3
While the batter rests, mix the ricotta with the plain yogurt, chives, parsley, lemon zest, 1 teaspoon of the lemon juice, and a pinch of salt in another bowl. Set aside.
- 4
Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the zucchini and cook for 4 to 5 minutes until golden on some edges. Stir in the garlic, the remaining lemon juice, and a pinch of salt, then cook 1 minute more. Remove from the heat.
- 5
Carefully remove the hot skillet from the oven. Stir the chickpea batter and pour it into the skillet. Bake for 14 to 16 minutes at 230 °C / 450 °F, until the base is set, golden around the edges, and lightly toasted on top.
- 6
While the farinata bakes, bring a saucepan of water to a boil. Cook the eggs for 7 minutes for a tender center. Transfer them to cold water, peel carefully, and set aside.
- 7
Lightly toast the sesame seeds in a small skillet for 1 minute over medium heat, stirring so they do not burn.
- 8
Remove the farinata from the oven and let it rest for 2 minutes. Spread the herbed ricotta cream over the top, arrange the golden zucchini, add the soft-boiled eggs cut in half, and finish with the sesame seeds and red pepper flakes if using.
- 9
Serve immediately, slicing the farinata into portions. If desired, drizzle with a little extra olive oil just before serving.
Chef tips
For a crispier farinata, make sure the skillet is thoroughly preheated before adding the batter. Resting the batter helps the chickpea flour hydrate for a more even texture.
Substitutions
You can swap the zucchini for thin asparagus or sautéed mushrooms. Ricotta can be replaced with soft goat cheese for a bolder flavor. If you prefer less heat, omit the red pepper flakes.
