1. In a small skillet, heat 1 teaspoon neutral oil over medium heat. Add the pumpkin seeds and ground cinnamon, and toast for 2 to 3 minutes until fragrant. Transfer to a plate to cool.
- 2
2. In the same skillet, add the plums, honey, star anise, and lemon juice. Cook over medium heat for 5 to 7 minutes, stirring gently, until the plums are tender but still hold their shape. Remove the star anise and keep warm.
- 3
3. In a large bowl, whisk together the all-purpose flour, baking powder, baking soda, fine salt, and brown sugar.
- 4
4. In another bowl, whisk the eggs with the milk, cottage cheese, melted unsalted butter, and vanilla extract until combined. Fold in the cooked millet.
- 5
5. Pour the wet ingredients into the dry ingredients and mix gently just until no dry streaks of flour remain. Let the batter rest for 5 minutes so the millet and flour can hydrate.
- 6
6. Heat a griddle or nonstick skillet over medium-low heat. If you want to keep the pancakes warm, preheat the oven to 95 °C / 200 °F.
- 7
7. Lightly grease the skillet with a little unsalted butter. Pour portions of batter of about 60 ml / 1/4 cup per pancake. Cook for 2 to 3 minutes on the first side, until bubbles appear on the surface and the edges look set.
- 8
8. Flip the pancakes and cook for 1 to 2 minutes more, until golden and cooked through in the center. Repeat with the remaining batter, adding a little more unsalted butter to the skillet as needed. Keep finished pancakes warm in the oven at 95 °C / 200 °F if using.
- 9
9. Serve the pancakes hot with the anise plums spooned over the top and finish with the crunchy toasted pumpkin seeds.
- 10
10. If you like, spoon the juices from the plums over each serving just before serving for extra gloss and flavor.
Chef tips
If your cottage cheese has large curds, briefly blend it with the milk before mixing for a smoother texture. Do not press down on the plums while cooking so they keep their shape.
Substitutions
You can swap the plums for firm nectarines or apricots. Pumpkin seeds can be replaced with sunflower seeds. Cottage cheese can be replaced with ricotta, though the texture will be slightly softer.
