Instructions

  1. 1

    1. Season the pork with the salt and black pepper. Turn the Instant Pot to Sauté on high heat (about 390°F/200°C) and add the olive oil. Brown the pork in 2 batches for 2-3 minutes per batch, stirring, until lightly colored. Remove and set aside.

  2. 2

    2. In the same pot, add the onion and cook for 2 minutes on Sauté, high heat (about 390°F/200°C). Add the garlic and ginger and cook 30 seconds more, stirring so they do not burn.

  3. 3

    3. Add the peaches, soy sauce, rice vinegar, sesame oil, and chicken broth. Scrape the bottom well with a spoon to release any browned bits. Return the pork to the pot along with any accumulated juices.

  4. 4

    4. Place a trivet or rack suitable for the Instant Pot over the mixture. Set a pressure-safe bowl on top with the jasmine rice and 240 ml (1 cup) water. Cover the bowl loosely with a suitable lid or perforated foil.

  5. 5

    5. Lock the Instant Pot lid and cook on high pressure for 8 minutes. Let the pressure release naturally for 10 minutes, then carefully release the remaining pressure manually.

  6. 6

    6. Open the pot. Carefully remove the rice bowl and fluff the rice with a fork. Remove the trivet as well.

  7. 7

    7. Turn Sauté back on at medium-high heat (about 375°F/190°C). Add the snow peas to the sauce with the pork and cook for 2 minutes, until tender-crisp.

  8. 8

    8. Mix the cornstarch with the water in a small bowl until smooth. Add this slurry to the pot and stir for 1-2 minutes on Sauté, medium-high heat (about 375°F/190°C), until the sauce thickens and turns glossy.

  9. 9

    9. Serve the jasmine rice in shallow bowls and spoon the pork, peach sauce, and snow peas over the top. Finish with scallion and sesame seeds.

  10. 10

    10. If desired, let the dish rest for 2 minutes before serving so the sauce can settle and the rice can absorb the remaining steam.

Chef tips

For deeper flavor, marinate the pork for 15 minutes with 1 tablespoon of the soy sauce and part of the ginger before browning. Use firm-ripe peaches so they add sweetness without completely breaking down.

Substitutions

You can swap the snow peas for thin green beans. Pork loin can be replaced with pork tenderloin, adjusting browning since it is leaner. For a gluten-free version, use certified gluten-free soy sauce.
