Instructions

  1. 1

    1. Rinse the jasmine rice until the water runs almost clear. Place it in an Instant Pot-safe bowl with 240 ml (1 cup) water and a pinch of salt. Set aside.

  2. 2

    2. Season the pork with the salt and black pepper. Turn the Instant Pot to Sauté mode on high, about 180°C/355°F at the hot base surface, and add the olive oil.

  3. 3

    3. Brown the pork for 3 to 4 minutes, stirring, until colored on several sides. Add the onion, garlic, and ginger, and sauté for 2 more minutes.

  4. 4

    4. Add the chopped plums, chicken broth, rice vinegar, soy sauce, honey, sesame oil, star anise, and ground cinnamon. Stir well to loosen any browned bits from the bottom.

  5. 5

    5. Place a trivet inside the pot over the pork mixture and set the bowl of rice on top. Lock the lid and cook on high pressure for 6 minutes.

  6. 6

    6. Let the pressure release naturally for 10 minutes, then quick release the remaining pressure. The safe internal temperature for pork should reach at least 63°C/145°F before resting.

  7. 7

    7. Carefully remove the rice bowl and fluff the rice with a fork. Remove the star anise from the sauce as well.

  8. 8

    8. Turn Sauté mode back on. Add the red cabbage to the pot with the pork and cook for 2 minutes, just until slightly softened but still textured.

  9. 9

    9. Mix the cornstarch with 30 ml (2 tbsp) cold water until smooth. Pour it into the pot and cook for 1 to 2 minutes, stirring, until the sauce thickens and turns glossy.

  10. 10

    10. Serve the jasmine rice in shallow bowls, spoon the pork with plum sauce and red cabbage over the top, and finish with fresh chives and sesame seeds.

Chef tips

For a deeper sauce, use very ripe plums. If you want a more caramelized finish, you can place the cooked pork under the oven broiler for 2 to 3 minutes at 230°C/450°F before serving.

Substitutions

You can substitute boneless chicken thighs for the pork loin, adjusting pressure cooking to 5 minutes on high. Jasmine rice can be replaced with basmati rice using the same amount of water. Honey can be swapped for maple syrup, though the flavor will change.
