Instructions

  1. 1

Season the pork with 1/2 teaspoon of the salt, black pepper, and sweet paprika.

  2. 2

Turn the Instant Pot to Sauté mode. When the insert is hot, add the olive oil and brown the pork for 4-5 minutes, stirring, until colored on several sides. Transfer to a plate.

  3. 3

Add the onion, carrot, celery, and garlic to the pot. Sauté for 3 minutes, stirring, until the onion softens.

  4. 4

Pour in the apple cider and scrape the bottom well with a wooden spoon to loosen the browned bits.

  5. 5

Add the pearl barley, chicken broth, wholegrain mustard, dried thyme, bay leaf, and remaining salt. Return the pork to the pot along with any accumulated juices.

  6. 6

Lock the lid and cook on High Pressure for 22 minutes. Let the pressure release naturally for 10 minutes, then carefully quick-release the remaining pressure.

  7. 7

Open the lid, remove the bay leaf, and stir in the cooked white beans, kale, and apple cider vinegar. Turn Sauté mode back on for 3-5 minutes, stirring, until the kale softens and the sauce thickens slightly.

  8. 8

Taste and adjust salt if needed. Serve hot with fresh parsley on top.

  9. 9

If you want to keep the dish warm, use the Instant Pot Keep Warm function. To reheat in the oven, place it in a covered baking dish at 160°F/70°C for 10-15 minutes.

Chef tips

For better browning, pat the pork dry with paper towels before sautéing and avoid overcrowding the pot. The barley will keep absorbing liquid as it rests, so add a splash more broth if you prefer a soupier texture.

Substitutions

You can swap the kale for chard or spinach, adding it at the end. If you do not have still apple cider, use unsweetened apple juice and add an extra teaspoon of vinegar. Chicken broth can be replaced with vegetable broth.
