Instructions

  1. 1

    1. In a small bowl, mix the Dijon mustard, maple syrup, apple cider vinegar, dried thyme, black pepper, and salt. Set aside.

  2. 2

    2. Turn the Instant Pot to Sauté mode and let the inner pot heat for 2 to 3 minutes. Add the olive oil, onion, and garlic, and cook for 3 minutes, stirring, until the onion softens.

  3. 3

    3. Add the cubed turkey and cook for 2 minutes, stirring, just until it slightly changes color on the outside. Pour in the maple-mustard mixture and stir to coat the turkey well.

  4. 4

    4. Add the rinsed wild rice blend and the chicken broth. Scrape the bottom with a wooden spoon to release any browned bits and help prevent a burn warning.

  5. 5

    5. Scatter the Brussels sprouts and diced apple on top without stirring too much. Close the lid and make sure the valve is set to sealing.

  6. 6

    6. Pressure cook on High for 18 minutes. The turkey should reach an internal serving temperature of at least 165°F/74°C by the end of cooking.

  7. 7

    7. Allow a natural pressure release for 10 minutes, then carefully perform a quick release for the remaining pressure.

  8. 8

    8. In a small bowl, mix the cornstarch with the water until smooth. Open the pot, switch back to Sauté mode, and stir in the slurry. Cook for 1 to 2 minutes, stirring, until the sauce lightly thickens.

  9. 9

    9. Taste and adjust salt if needed. Sprinkle with fresh parsley and serve hot. If holding for service, use the Keep Warm function and keep the dish above 140°F/60°C.

Chef tips

For better texture, avoid stirring the Brussels sprouts too much before pressure cooking; this helps them keep their shape. If you like a sweeter contrast, add 1 extra teaspoon of maple syrup at the end.

Substitutions

You can use boneless turkey thigh instead of breast. The wild rice blend can be replaced with a brown rice blend, adjusting the liquid if needed. A firm pear can replace the apple for a more floral flavor profile.
