Instructions

  1. 1

    1. Turn the Instant Pot to Sauté on high. Once the pot is hot, add the olive oil, onion, and garlic. Cook for 3 minutes, stirring, until the onion softens slightly.

  2. 2

    2. Add the diced turkey, salt, and black pepper. Sauté for 3 more minutes, stirring, until the outside of the turkey loses its pink color. It does not need to be fully cooked at this stage.

  3. 3

    3. Stir in the crushed tomato, chicken broth, peanut butter, raisins, cocoa powder, cumin, cinnamon, smoked paprika, dried oregano, and ground chipotle. Mix well until the peanut butter dissolves into the sauce.

  4. 4

    4. Add the rinsed rice and spread it evenly, gently pressing so it is nearly submerged. Place the zucchini on top without stirring too much to prevent the rice from sticking to the bottom.

  5. 5

    5. Cancel Sauté. Lock the lid and make sure the valve is set to sealing. Pressure cook on high for 8 minutes.

  6. 6

    6. When the cooking time ends, allow a natural pressure release for 10 minutes, then carefully release the remaining pressure. The safe internal temperature of the turkey should reach at least 165°F / 74°C.

  7. 7

    7. Open the lid, add the lime juice, and gently fold everything together so the rice, sauce, and zucchini are evenly combined without breaking up the pieces too much.

  8. 8

    8. Serve hot, sprinkling the sesame seeds and fresh cilantro on top. If you want to keep the dish warm before serving, use the Keep Warm function and keep the food above 140°F / 60°C.

Chef tips

For a smoother sauce, you can blend the crushed tomato, broth, peanut butter, raisins, and spices before adding them to the pot. If you prefer firmer zucchini, cut it into larger pieces.

Substitutions

You can replace the turkey with boneless chicken thighs. Zucchini can be swapped for green beans or chayote. For a sesame-free version, omit the sesame seed garnish.
