Instructions

  1. 1

    1. Season the chicken thighs on both sides with the salt and black pepper.

  2. 2

    2. Turn the Instant Pot to Sauté mode. Once the insert is hot, add the olive oil and brown the chicken for 2 to 3 minutes per side, without fully cooking it. Transfer the chicken to a plate.

  3. 3

    3. Add the onion to the pot and sauté for 2 minutes. Stir in the garlic, ginger, and red pepper flakes, and cook for 30 seconds more until fragrant.

  4. 4

    4. Pour in the chicken broth and scrape the bottom of the pot well to release any browned bits. Add the coconut milk, soy sauce, honey, lime zest, and lime juice, and stir to combine.

  5. 5

    5. Add the jasmine rice in an even layer without stirring too much. Place the browned chicken and any juices on top. Scatter the pineapple over the surface.

  6. 6

    6. Lock the lid, set the valve to sealing, and cook on high pressure for 6 minutes. Then allow a natural release for 10 minutes and carefully quick-release the remaining pressure.

  7. 7

    7. Open the lid and add the green beans. Close again and let the pot rest for 4 minutes using the residual heat so the beans become tender but stay green. If you prefer softer beans, use Sauté for 1 to 2 minutes.

  8. 8

    8. Gently fold everything together so the sauce blends with the rice without breaking up the chicken too much. Adjust salt if needed.

  9. 9

    9. Serve hot, finished with chopped fresh cilantro. If you want to hold it warm, use the Warm setting; safe holding temperature should stay above 140°F / 60°C.

Chef tips

For fluffier rice, rinse it until the water runs almost clear. Do not stir the rice after adding it to the pot to help prevent sticking. Fresh pineapple gives a better balance of sweetness and acidity than canned pineapple.

Substitutions

You can use chicken breast instead of thighs, reducing the final resting time if the pieces are small. Basmati rice can replace jasmine rice for a slightly drier texture. Parsley can replace cilantro if you prefer a milder flavor.
