Instructions

  1. 1

    1. In a bowl, whisk together the red miso, soy sauce, rice vinegar, honey, sesame oil, grated ginger, and black pepper until smooth. Set aside.

  2. 2

    2. Turn the Instant Pot to Sauté mode on medium heat. Once the insert is hot, add the neutral oil. Add the onion, garlic, and carrot, and cook for 3 minutes, stirring.

  3. 3

    3. Add the mushrooms and cook for 2 more minutes until they start to soften. Add the chicken pieces and lightly brown for 2 minutes, stirring so they get coated with the aromatics.

  4. 4

    4. Pour in the miso mixture and stir for 30 seconds. Add the chicken broth and scrape the bottom well to release any browned bits and prevent a burn warning.

  5. 5

    5. Add the jasmine rice in an even layer without stirring too much. Arrange the bok choy stems on top. Lock the lid and cook on high pressure for 6 minutes.

  6. 6

    6. When cooking ends, let the pressure release naturally for 8 minutes, then carefully quick release the remaining pressure. The safe internal temperature of the chicken should reach 165°F/74°C.

  7. 7

    7. Open the lid, add the bok choy leaves, and gently stir. Place the lid back on without pressure for 2 minutes so the leaves soften with the residual heat.

  8. 8

    8. Fluff the rice with a fork, divide into bowls, and finish with scallion and sesame seeds. Serve hot, ideally at about 160-175°F/71-79°C.

Chef tips

For fluffier rice, rinse it until the water runs almost clear. If using rehydrated dried shiitake, drain them well before adding. Do not stir the rice too much once added so it stays light and separate.

Substitutions

You can swap bok choy for spinach or napa cabbage, and shiitake for standard button mushrooms. Red miso can be replaced with white miso for a milder flavor, though the final profile will be less deep.
