Instructions

  1. 1

    1. Season the chicken with half of the salt, the black pepper, cumin, turmeric, and sweet paprika.

  2. 2

    2. Turn the Instant Pot to Sauté on high. Once hot, add the olive oil and brown the chicken for 3 to 4 minutes, stirring to sear several sides. Remove and set aside.

  3. 3

    3. In the same pot, add the onion and cook for 2 minutes. Stir in the garlic and ginger and cook 30 seconds more, stirring, until fragrant.

  4. 4

    4. Add the rinsed jasmine rice and stir for 30 seconds to coat it with the aromatics. Add the sweet potato, coconut milk, chicken broth, and remaining salt. Scrape the bottom well to release any browned bits.

  5. 5

    5. Return the chicken to the pot and scatter the kale on top without stirring too much so the rice stays evenly submerged.

  6. 6

    6. Lock the lid and cook on high pressure for 8 minutes. Let the pressure release naturally for 10 minutes, then carefully finish with a quick release.

  7. 7

    7. Open the pot, add the lime juice, lime zest, and fresh cilantro. Gently stir to combine the wilted kale and loosen the creamy rice.

  8. 8

    8. Taste and adjust salt if needed. Serve hot. If you want to keep it warm, use the Warm/Keep Warm setting; avoid exceeding 74 °C / 165 °F during reheating so the chicken stays juicy.

Chef tips

For an even creamier finish, let it rest uncovered for 2 minutes before serving. If you like brighter citrus flavor, add a little extra lime zest right at the end.

Substitutions

You can swap the kale for spinach added after cooking, and the jasmine rice for basmati rice, though the texture will be slightly less creamy. Cilantro can be replaced with fresh parsley.
