Instructions

  1. 1

    1. Season the chicken with 1/2 teaspoon of the salt and the black pepper.

  2. 2

    2. Turn the Instant Pot to Sauté mode. When hot, add the olive oil and butter. Brown the chicken for 2 to 3 minutes per side, without fully cooking it through. Remove and set aside.

  3. 3

    3. In the same pot, add the onion and cook for 3 minutes, stirring. Add the garlic and mushrooms and sauté for 4 to 5 minutes until the mushrooms release some of their moisture.

  4. 4

    4. Add the pearled barley, sweet paprika, dried tarragon, and the remaining salt. Stir for 30 seconds so the barley is well coated.

  5. 5

    5. Pour in the chicken broth and scrape the bottom of the pot with a wooden spoon to loosen the browned bits. Add the Dijon mustard and stir well.

  6. 6

    6. Return the chicken and any juices to the pot, placing it over the barley mixture. Lock the lid and cook on high pressure for 18 minutes.

  7. 7

    7. Let the pressure release naturally for 5 minutes, then carefully do a quick release.

  8. 8

    8. Open the pot and stir in the heavy cream, spinach, lemon zest, and lemon juice. Stir for 1 to 2 minutes on Sauté mode until the sauce is creamy and the spinach wilts. If you want to serve it very hot, make sure it reaches at least 74°C/165°F before plating.

  9. 9

    9. Taste and adjust salt if needed. Serve with fresh parsley on top.

Chef tips

For a silkier texture, let it rest for 3 minutes before serving. If the sauce is thinner than you like, cook for 1 to 2 extra minutes on Sauté mode, stirring often.

Substitutions

You can use chicken breast instead of thighs, but cut it into large pieces so it does not dry out. Tarragon can be replaced with dried thyme. For a dairy-free version, use a plant-based cooking cream and replace the butter with more olive oil.
