Instructions

1. In a small bowl, whisk together the white miso, coconut milk, soy sauce, honey, lime juice and zest, and black pepper until smooth. Set aside.
- 2
2. Turn the Instant Pot to Sauté on high. Once the insert is hot, add the olive oil, yellow onion, garlic, and fresh ginger. Cook for 2-3 minutes, stirring, until the onion softens slightly.
- 3
3. Add the chicken thigh pieces and sprinkle with the salt. Sauté for 3 minutes to lightly sear the outside, without fully cooking them through.
- 4
4. Stir in the diced turnips and rinsed jasmine rice. Cook for 1 minute so the rice gets coated with the aromatics.
- 5
5. Pour in the chicken broth and scrape the bottom of the pot well to release any browned bits. Turn off Sauté mode.
- 6
6. Lock the lid and cook on high pressure for 7 minutes. Let the pressure release naturally for 10 minutes, then carefully quick-release the remaining pressure.
- 7
7. Open the lid and add the reserved white miso lime sauce. Stir gently for 1-2 minutes so it blends with the rice, chicken, and turnips and warms through without boiling hard.
- 8
8. Add most of the chopped fresh chives and stir. Taste and adjust salt if needed.
- 9
9. Serve hot, topped with the remaining chives. If you want to keep it warm, use the Keep Warm function; avoid exceeding 165°F/74°C so the sauce keeps a silky texture.
Chef tips
For fluffier rice, let it rest uncovered for 2 minutes before serving. Cut the turnips into even cubes so they cook at the same rate as the chicken.
Substitutions
You can substitute turnip with parsnip or kohlrabi. Chives can be replaced with the green tops of scallions. If preferred, use basmati rice in the same volume, though the result will be slightly less creamy.
