Instructions

  1. 1

    1. Season the beef with 1 teaspoon of the salt, black pepper, and sweet paprika. Turn the Instant Pot to high Sauté. When the insert is hot, add the olive oil and brown the beef in 2 batches for 3-4 minutes per batch, stirring to sear several sides. Transfer the beef to a plate.

  2. 2

    2. Add the butter and onion to the pot. Cook for 8-10 minutes, stirring often, until the onion is very soft and deeply golden. Stir in the garlic and cook 30 seconds more.

  3. 3

    3. Add the tomato paste and cook for 1 minute, stirring. Pour in the balsamic vinegar and 120 ml (1/2 cup) of the beef broth. Scrape the bottom well with a spoon to loosen any browned bits.

  4. 4

    4. Return the beef to the pot with the fresh thyme and the remaining 600 ml (2 1/2 cups) beef broth. Scatter the wild rice in an even layer over the liquid without stirring too much.

  5. 5

    5. Lock the lid, set the valve to sealing, and cook on high pressure for 28 minutes. Instant Pot high-pressure cooking reaches about 239-244°F (115-118°C). When finished, allow a 10-minute natural release, then carefully release the remaining pressure.

  6. 6

    6. Open the lid and add the green beans on top. Close again, keep the valve on sealing, and cook on high pressure for 2 more minutes. Pressure cooking will again be around 239-244°F (115-118°C). Quick release when done.

  7. 7

    7. Gently stir to combine the rice, beef, onion, and green beans. Taste and adjust with the remaining salt if needed. Serve hot with a little extra fresh thyme on top.

  8. 8

    8. If you want to hold it before serving, use the Keep Warm function; the holding temperature is typically around 145-172°F (63-78°C).

Chef tips

For deeper flavor, let the onion develop a rich golden color before adding the garlic. If your beef pieces are very large, cut them into 1 1/4-inch cubes for tender, even cooking.

Substitutions

You can swap the green beans for asparagus pieces or zucchini strips, adding them in the same final step. Fresh thyme can be replaced with 1 teaspoon dried thyme. For a dairy-free version, use more olive oil instead of butter.
