2. Place the strawberries on the tray and toss them with the honey, orange juice, and half of the orange zest. Roast for 12 minutes at 200°C / 400°F, until juicy and slightly concentrated. Set aside.

3. While the strawberries roast, place the croissant pieces in a bowl. Add the melted butter, cinnamon, salt, and brown sugar. Mix well so the pastry is evenly coated.
- 4
4. Spread the croissant mixture on another tray or on a free section of the same tray. Bake at 200°C / 400°F for 8 minutes, stirring halfway through, until the crumbs are golden and crisp.

5. In a bowl, mix the Greek yogurt with half of the vanilla extract and stir until creamy.
- 6
6. In another small bowl, combine the pistachios, chia seeds, the remaining orange zest, and the remaining vanilla extract. This will create a crunchy, fragrant topping.
- 7
7. To serve, divide the vanilla yogurt among plates or bowls. Spoon the warm croissant crumble over it, then add the roasted strawberries and their juices.

8. Finish each serving with the pistachio-chia mixture and sprinkle the chopped mint on top. Serve immediately to keep the contrast between crisp, creamy, and juicy textures.
Chef tips
If the croissants are very fresh, toast them for 3 to 4 minutes before mixing with the butter so they crisp up better. You can also serve the strawberries slightly warm and the yogurt cold for a stronger contrast.
Substitutions
You can swap the strawberries for raspberries or diced peaches. Pistachios can be replaced with almonds if preferred. For a less sweet version, slightly reduce the honey.
