Instructions

  1. 1

    1. Season the turkey with half of the salt, black pepper, and sweet paprika.

  2. 2

    2. Turn the Instant Pot to Sauté mode on high. When the insert is hot, add the olive oil and brown the turkey for 4 to 5 minutes, stirring, until lightly colored and the largest pieces reach at least 165°F/74°C in the center if you want to check. Transfer to a plate.

  3. 3

    3. In the same pot, add the onion, celery, and garlic. Sauté for 3 minutes until slightly softened. Stir in the rosemary and cook for 30 seconds more.

  4. 4

    4. Pour in the dry white wine and scrape the bottom well with a wooden spoon to release any browned bits. Let it reduce for 1 minute.

  5. 5

    5. Add the wild rice blend, broth, Dijon mustard, pumpkin, lemon zest, remaining salt, and the reserved turkey. Stir once to distribute everything evenly.

  6. 6

    6. Lock the lid, set the valve to sealing, and cook on high pressure for 20 minutes.

  7. 7

    7. Let the pressure release naturally for 10 minutes, then carefully quick-release the remaining pressure.

  8. 8

    8. Open the lid. Mix the cornstarch with the water in a small bowl until smooth. Turn Sauté mode back on at medium and stir in the cream, lemon juice, and cornstarch slurry. Cook for 2 to 3 minutes, stirring, until the sauce lightly thickens.

  9. 9

    9. Taste and adjust with more salt or pepper if needed. Turn off the pot, add the chopped parsley, and serve hot.

  10. 10

    10. If you want to hold it before serving, use the Keep Warm function and make sure the dish stays above 140°F/60°C.

Chef tips

For deeper flavor, brown the turkey in two batches so it sears instead of steaming. If your wild rice blend contains very firm grains, you can soak it for 20 minutes and drain before cooking.

Substitutions

You can use boneless turkey thigh instead of breast. Pumpkin can be replaced with butternut squash. If you prefer not to use wine, replace it with the same amount of extra broth. For a dairy-free version, use an unsweetened plant-based cream and omit any milk-based ingredient.
