Instructions
- 1
Preheat the oven to 220°C / 425°F. Pat the chicken breasts dry with paper towels and season them with 1 tablespoon olive oil, smoked paprika, 1 tablespoon lemon juice, 1 teaspoon salt, and 1/2 teaspoon black pepper.
- 2
Place the cauliflower florets in a pot of boiling water and cook for 10 to 12 minutes, until very tender. Drain well.
- 3
Meanwhile, make the chimichurri by mixing the parsley, mint, 2 tablespoons olive oil, red wine vinegar, 1 minced garlic clove, 1/2 teaspoon salt, and 1/4 teaspoon black pepper in a bowl. Set aside.
- 4
Heat a large oven-safe skillet over medium-high heat with 1 tablespoon olive oil. Sear the chicken breasts for 2 to 3 minutes per side until lightly golden.
- 5
Transfer the skillet to the oven and cook the chicken for 10 to 14 minutes at 220°C / 425°F, or until safely cooked through and still juicy. Remove and let rest for 5 minutes.
- 6
For the mash, place the drained cauliflower in a food processor or blender with the tahini, chicken broth, 1 tablespoon lemon juice, 1 whole garlic clove, 1 tablespoon olive oil, and 1/2 teaspoon salt. Blend until smooth and creamy.
- 7
In another skillet, heat 1 tablespoon olive oil over medium heat. Add the cucumber, ground cumin, sesame seeds, the remaining minced garlic clove, 1/4 teaspoon salt, and 1/4 teaspoon black pepper. Sauté for 2 to 3 minutes to warm through and lightly color it without losing all of its texture.
- 8
Slice the chicken breasts thickly. Serve a base of cauliflower mash, arrange the chicken on top, and finish with the mint chimichurri. Serve with the warm sesame cucumber on the side.
- 9
If desired, adjust with extra salt, black pepper, or a few more drops of lemon juice just before serving.
Chef tips
Drain the cauliflower very well before blending to avoid a watery mash. For deeper flavor, let the chimichurri rest for 10 minutes before serving.
Substitutions
You can substitute boneless chicken thighs for the breast, adjusting the cooking time as needed. Tahini can be replaced with sunflower seed butter for a sesame-free variation.
