Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Lightly grease a baking tray or dish with a little of the olive oil.
- 2
Pat the fish fillets dry with paper towels and place them on the tray. Season them with half of the salt, the black pepper, sweet paprika, and the zest of 1 lime.
- 3
In a bowl, mix the chopped Brazil nuts, breadcrumbs, 2 finely chopped garlic cloves, 2 tablespoons of the cilantro, 1 tablespoon olive oil, and 1 tablespoon lime juice until the mixture is moist and crumbly.
- 4
Press the Brazil nut mixture onto the top of each fillet to create an even crust.
- 5
Bake the fish for 12 to 15 minutes at 220 °C / 425 °F, or until the fish is cooked through and the crust is golden.
- 6
Meanwhile, make the rice. In a medium saucepan, heat 1 tablespoon olive oil over medium heat. Sauté half of the chopped onion and 1 chopped garlic clove for 2 to 3 minutes until translucent.
- 7
Add the rinsed rice, stir for 1 minute, then add the water and a pinch of salt. Bring to a boil, cover, and cook over low heat for 15 minutes. Turn off the heat and let rest for 5 minutes. Fluff with a fork and mix in 3 tablespoons chopped cilantro and 1 tablespoon lime juice.
- 8
For the sauce, place the remaining chopped onion and the butter in a small skillet over medium heat. Cook for 2 to 3 minutes until softened.
- 9
Add the passion fruit pulp, honey, minced red chili, the remaining lime juice, and a pinch of salt. Cook for 3 to 4 minutes over medium heat until the sauce is warm, fragrant, and slightly thickened.
- 10
Serve a bed of cilantro rice, place a crusted fish fillet on top or alongside, and finish with the warm passion fruit sauce spooned over or around it.
Chef tips
If the passion fruit pulp is very tart, add 1 extra teaspoon of honey. For a deeper golden crust, place the fish under the broiler for 1 to 2 minutes at the end, watching closely.
Substitutions
You can use sea bass, halibut, or pollock instead of the white fish. Brazil nuts can be replaced with cashews if you do not need to keep the original flavor profile. For a gluten-free version, use gluten-free breadcrumbs.
