Honduran Chicken in Loroco, Dried Pepper, and Roasted Tomato Sauce with Gentle Coconut Rice

An original recipe inspired by Honduran flavors: seared chicken simmered in a silky roasted tomato, loroco, and dried pepper sauce, served with gentle, aromatic coconut rice. It is homey, comforting, and rooted in Catracho flavor without copying a classic dish.

Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. Place the tomatoes, half of the onion cut into large chunks, and 4 whole garlic cloves on a sheet pan. Add the dried chile pasa and drizzle with 1 tablespoon vegetable oil. Roast for 18 to 20 minutes until the tomatoes are well browned and the pepper has softened slightly, watching carefully so it does not burn.

  2. 2

    2. While the sauce base roasts, pat the chicken thighs dry and season them with 1 teaspoon salt, black pepper, and annatto powder.

  3. 3

    3. Heat a wide skillet or braiser over medium-high heat. Add the remaining 1 tablespoon vegetable oil and sear the chicken for 4 to 5 minutes per side until the skin is deeply golden. Remove the chicken and set aside.

  4. 4

    4. Transfer the roasted tomatoes, roasted onion, roasted garlic, chile pasa, ground cumin, and chicken broth to a blender. Blend until smooth.

  5. 5

    5. In the same skillet used for the chicken, sauté the finely chopped remaining onion and the 2 chopped garlic cloves for 2 to 3 minutes. Carefully pour in the blended sauce, then add the loroco, half of the chopped cilantro, and 1/2 teaspoon salt. Cook for 5 minutes over medium heat, stirring occasionally.

  6. 6

    6. Return the chicken to the skillet with the skin side up. Reduce to medium-low heat, partially cover, and cook for 25 to 30 minutes until the chicken is tender and reaches an internal temperature of 74 °C / 165 °F. Stir in the lime juice at the end.

  7. 7

    7. For the gentle coconut rice, melt the butter in a medium pot over medium heat. Add the white rice and toast it for 1 minute. Pour in the coconut milk, water, bay leaf, and the remaining 1 teaspoon salt. Once it comes to a boil, reduce to very low heat, cover, and cook for 18 to 20 minutes until the rice is tender.

  8. 8

    8. Turn off the heat and let the rice rest, covered, for 5 minutes. Remove the bay leaf and fluff with a fork.

  9. 9

    9. Serve a portion of coconut rice, place the chicken on top or alongside, spoon over plenty of loroco sauce, and finish with the remaining chopped cilantro.

Chef tips

If the chile pasa is very dry, soak it in hot water for 10 minutes before roasting. For a smoother sauce, strain it after blending. Cook the loroco just enough to preserve its floral, herbal aroma.

Substitutions

You can use cut-up whole chicken instead of thighs. If fresh loroco is unavailable, use frozen loroco. The butter in the rice can be replaced with vegetable oil for a dairy-free version.
