Instructions
- 1
Preheat the oven to 220 °C / 425 °F. Place the peeled green plantains, cut lengthwise, on a tray, rub them with 1 tablespoon of vegetable oil, season with a pinch of salt, and roast for 22 to 25 minutes, turning halfway through, until golden and tender around the edges.
- 2
While the plantains roast, place the chicken in a bowl and mix it with the sour orange juice, 1 teaspoon salt, black pepper, ground cumin, dried oregano, and achiote paste. Let it rest for 10 minutes.
- 3
Heat 1 tablespoon of vegetable oil in a wide skillet or braiser over medium-high heat. Sear the chicken for 3 to 4 minutes per side until nicely browned. Remove and set aside on a plate.
- 4
In the same skillet, add the remaining tablespoon of vegetable oil. Sauté the white onion for 3 minutes. Add the garlic and red sweet pepper, and cook 2 minutes more. Stir in the ripe tomatoes and cook for 5 to 6 minutes, stirring, until a juicy base forms.
- 5
Add the crushed corn rosquillas and stir for 1 minute so they absorb the sofrito juices. Pour in the chicken broth gradually, stirring constantly to prevent lumps, and cook for 3 minutes until the sauce starts to thicken.
- 6
Return the chicken to the skillet along with any juices it released. Reduce to medium-low heat, partially cover, and cook for 18 to 20 minutes, until the chicken is fully cooked and tender.
- 7
Stir in the Honduran-style cream and fresh cilantro. Cook 2 minutes more, stirring gently, and adjust with the remaining salt if needed.
- 8
Serve the chicken covered with plenty of rosquilla corn sauce and accompany with the hot roasted green plantains.
Chef tips
If you want a smoother sauce, blend the sofrito with the broth before adding the crushed rosquillas. Rosquillas thicken quickly, so you can add a little more broth if the sauce sits too long.
Substitutions
You can use chicken breast pieces instead of thighs, slightly reducing the cooking time. If Honduran cream is unavailable, use sour cream or unsweetened heavy cream. Red bell pepper can replace red sweet pepper.
