Instructions

1. Season the chicken breasts with 4 g (3/4 tsp) salt, black pepper, cumin, half of the chopped garlic, and 15 ml (1 tbsp) fresh lime juice. Let rest for 10 minutes while you prepare the remaining ingredients.
- 2
2. Place the yuca in a pot with enough water to cover and 2 g (1/2 tsp) salt. Bring to a boil and cook over medium heat for 18 to 20 minutes, until tender but not falling apart. Drain well and let it steam dry for 5 minutes.
- 3
3. While the yuca cooks, make the chimol by combining the radishes, tomato, 60 g (about 1/3 cup) of the onion, 30 g (about 1/4 cup) of the green bell pepper, 10 g (about 1/3 cup) of the cilantro, the white vinegar, 15 ml (1 tbsp) lime juice, and 1 g (1/4 tsp) salt in a bowl. Set aside so the flavors can meld.

4. For the sauce, melt the butter with 15 ml (1 tbsp) vegetable oil in a skillet over medium heat. Add the remaining onion and green bell pepper, and sauté for 4 to 5 minutes until softened. Stir in the remaining garlic and cook 30 seconds more.
- 5
5. Add the sweet corn and cook for 2 minutes. Pour in the chicken broth and simmer over medium heat for 6 to 8 minutes. Transfer the mixture to a blender with 10 g (about 1/3 cup) cilantro and blend until smooth. Return the sauce to the skillet and cook 3 more minutes; adjust with 1 g (1/4 tsp) salt and 15 ml (1 tbsp) lime juice.
- 6
6. Heat a large skillet or griddle over medium-high heat. Add 15 ml (1 tbsp) vegetable oil and sear the chicken for 4 to 5 minutes per side, or until it reaches an internal temperature of 165°F and 74°C. Remove and let rest for 3 minutes.

7. In another skillet, heat the remaining vegetable oil over medium-high heat. Brown the cooked yuca for 6 to 8 minutes, turning as needed, until golden and crisp on the edges. Add a pinch of salt at the end.
- 8
8. Spoon a layer of sweet corn sauce onto each plate, place the chicken on top, serve with the golden yuca, and finish with the radish chimol. Garnish with the remaining cilantro and serve right away.
Chef tips
For a silkier sauce, strain it after blending. If the corn is very sweet, add a few extra drops of lime juice to balance the flavor.
Substitutions
You can use boneless chicken thighs instead of breast. If yuca is unavailable, substitute potatoes or taro, though the result will be less traditional.
