Instructions
- 1
1. Season the beef with 4 g salt, black pepper, and cumin. Mix well and let it rest for 10 minutes while you prepare the remaining ingredients.
- 2
2. Heat a heavy pot over medium-high heat with 15 ml (1 tbsp) oil. Brown the beef in batches for 6 to 8 minutes until nicely colored. Remove and set aside.
- 3
3. In the same pot, add the remaining 15 ml (1 tbsp) oil, white onion, garlic, and red bell pepper. Cook for 4 minutes until softened. Add the tomato, coyol fruits, and annatto, and cook 5 minutes more, lightly crushing the tomato and coyol so they release their flavor.
- 4
4. Return the beef to the pot and pour in 500 ml (2 cups) hot beef broth or water. Add half of the chopped cilantro. Once it comes to a boil, lower the heat, cover, and simmer gently for 50 minutes, or until the beef is tender and the sauce has thickened. Add a few tablespoons of water during cooking if needed.
- 5
5. Meanwhile, make the cracked corn rice. In a medium saucepan combine the cracked corn, 720 ml (3 cups) water, and 2 g salt. Bring to a boil, reduce to low heat, cover, and cook for 30 to 35 minutes, stirring occasionally, until the corn is tender and creamy.
- 6
6. When the cracked corn is cooked, add the butter and stir until melted. Keep covered over very low heat for 2 minutes, then turn off the heat.
- 7
7. Preheat the oven to 220 °C / 425 °F. Toss the squash with red onion, cane vinegar, sour orange juice, 2 g salt, and 1 tablespoon of the hot beef sauce. Spread on a baking tray or baking dish and roast for 18 to 20 minutes, stirring once, until the squash is tender but not falling apart.
- 8
8. Uncover the beef, taste for salt, and adjust with the remaining 2 g if needed. Add the rest of the cilantro and cook 2 minutes more to finish the sauce.
- 9
9. Serve a bed of cracked corn rice, spoon the beef with plenty of coyol sauce over or beside it, and add the warm roasted squash salad on the side.
- 10
10. For a juicier presentation, spoon some of the beef sauce directly over the cracked corn rice before serving.
Chef tips
If the coyol is very fibrous, blend it with part of the broth before adding it to the pot for a smoother sauce. Brown the beef well to build deeper flavor.
Substitutions
If coyol is unavailable, you can use a mix of ripe red plum and a little soaked dried apricot for sweetness and body, though the profile will change. Cracked corn can be replaced with split white corn or thick-cooked coarse polenta.
