Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper.
- 2
Melt 15 g of butter in a skillet over medium heat. Add the pears, brown sugar, cinnamon, cardamom, 1 tablespoon of honey, lemon juice, and salt. Cook for 5 to 7 minutes until the fruit is tender but not falling apart and the liquid has reduced.
- 3
Stir 1 tablespoon of black sesame into the pear filling, mix well, and let it cool for 10 minutes.
- 4
Melt the remaining 15 g of butter. Lay one sheet of phyllo dough on the work surface and lightly brush it with butter. Place another sheet on top and brush again. Cut into 3 long strips of equal size. Repeat with the remaining phyllo to make 9 double strips.
- 5
Divide the pear filling among one end of each strip. Roll them up, folding the sides inward, to form compact rolls. Place them seam-side down on the tray.
- 6
Brush the rolls with any remaining butter and sprinkle the remaining black sesame over the top.
- 7
Bake for 14 to 18 minutes at 200 °C / 400 °F until deeply golden and crisp.
- 8
Meanwhile, place the Greek yogurt, heavy cream, the remaining 2 tablespoons of honey, and the vanilla extract in a small saucepan. Warm over very low heat for 2 to 3 minutes, without boiling, stirring until smooth and gently warm.
- 9
Serve the freshly baked rolls with the warm honey cream spooned over or on the side for dipping.
Chef tips
If phyllo dries out quickly, keep it covered with a barely damp towel while assembling. Bosc or Conference pears work especially well because they hold their shape.
Substitutions
You can swap the pear for firm apples. Black sesame can be replaced with toasted white sesame, although the look and flavor profile will change. Heavy cream can be replaced with more yogurt for a lighter, tangier sauce.
