Instructions
- 1
Preheat the oven to 200 °C / 400 °F and line a baking tray with parchment paper.
- 2
Heat the olive oil in a skillet over medium heat. Add the shallot and cook for 2 to 3 minutes until softened. Stir in the garlic and cook for 30 seconds more.
- 3
Add the chopped mushrooms, salt, black pepper, and 1 tablespoon of fresh thyme. Cook for 6 to 8 minutes, stirring, until the mushrooms release their moisture and it is mostly evaporated. Remove from the heat and let cool for 5 minutes.
- 4
In a bowl, combine the warm mushrooms with the goat cheese, walnuts, and parsley until the filling is evenly mixed.
- 5
Place 1 sheet of phyllo pastry on a clean surface and lightly brush it with melted butter. Lay another sheet on top and brush again. Cut the stacked sheets into 4 long strips of equal size.
- 6
Place a spoonful of filling at one end of each strip and roll up, folding the sides inward to make compact rolls. Repeat with the remaining phyllo, butter, and filling until you have 8 rolls.
- 7
Arrange the rolls on the tray and brush the tops with the remaining butter. Bake for 14 to 16 minutes at 200 °C / 400 °F until golden and crisp.
- 8
While they bake, gently warm the honey in a small saucepan or microwave until fluid, without boiling. Stir in the remaining tablespoon of fresh thyme.
- 9
Serve the rolls hot or warm, drizzled with the thyme honey.
Chef tips
Chop the mushrooms very finely so the filling stays compact and the phyllo does not tear while rolling. If the phyllo dries out quickly, keep it covered with a barely damp towel while you work.
Substitutions
You can use firm cream cheese instead of goat cheese for a milder flavor. Walnuts can be replaced with toasted sunflower seeds if you want to avoid tree nuts.
