Instructions

  1. 1

    1. Season the chicken thighs with 4 g (3/4 tsp) of the salt, black pepper, and annatto powder. Let them rest for 10 minutes while you prepare the remaining ingredients.

  2. 2

    2. Heat a wide pot or deep skillet over medium heat. Add the vegetable oil and brown the chicken skin-side down for 5 to 6 minutes, then turn and cook 3 minutes more. Remove and set aside.

  3. 3

    3. In the same pot, add the red onion, garlic, and green bell pepper. Cook for 5 to 7 minutes, stirring, until the onion is soft and fragrant.

  4. 4

    4. Add the blended tamarillo, strained naranjilla pulp, lager beer, chicken stock, cumin, dried oregano, grated panela, and half of the chopped cilantro. Stir well and cook for 3 minutes so the flavors come together.

  5. 5

    5. Return the chicken and its juices to the pot. Once it reaches a gentle boil, reduce to medium-low heat, partially cover, and cook for 30 to 35 minutes, until the chicken is fully cooked and tender and the sauce has slightly thickened.

  6. 6

    6. Meanwhile, place the pearled barley and water in a medium saucepan. Bring to a boil, reduce the heat, and cook covered for 25 to 30 minutes until the barley is tender.

  7. 7

    7. Add the corn kernels and the remaining 4 g (3/4 tsp) salt to the barley, and cook 5 minutes more until the corn is tender and the liquid is mostly absorbed.

  8. 8

    8. Turn off the heat for the barley and stir in the butter, crumbled fresh cheese, and a little of the remaining cilantro. Adjust salt if needed.

  9. 9

    9. Taste the seco sauce and balance it with a few drops of fresh lime juice. If you want a thicker sauce, simmer uncovered for 3 to 5 additional minutes.

  10. 10

    10. Serve a bed of tender barley with corn on each plate, place the chicken on top with plenty of sauce, and finish with the remaining chopped cilantro. If you want to keep it warm before serving, you may hold it covered in a 200 °F / 95 °C oven for up to 10 minutes.

Chef tips

To peel tamarillo easily, score the skin lightly, cover it with boiling water for 2 minutes, then transfer to cold water. If the sauce tastes too tart, add a little more panela; if it becomes too thick, loosen it with a bit more stock.

Substitutions

You can replace the barley with cooked rice or quinoa, although the dish will lose part of its character. If you cannot find naranjilla, use mild passion fruit or a smaller amount of lime-orange mixture. Fresh cheese can be replaced with farmer's cheese or omitted.
