Instructions

  1. 1

    1. Season the chicken with 1/2 teaspoon salt, black pepper, sweet paprika, 1 teaspoon cumin, half of the garlic, and 1 tablespoon lime juice. Mix well and let it rest for 10 minutes while you prepare the rest.

  2. 2

    2. In a small bowl, mix the guava puree, chopped chipotle in adobo, and chicken stock or water until you have a thick but pourable glaze. Set aside.

  3. 3

    3. For the cream, blend or mash the avocado with the Greek yogurt, 1 tablespoon lime juice, half of the chives, and a pinch of salt until smooth. Chill until needed.

  4. 4

    4. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add half of the red onion and cook for 2 minutes. Add the chicken and sear for 6 to 8 minutes, stirring occasionally, until fully cooked and it reaches an internal temperature of 165°F and 74°C.

  5. 5

    5. Reduce the heat to medium, pour the guava-chipotle glaze over the chicken, and cook for 2 to 3 more minutes, stirring, until the chicken is glossy and coated. Remove from the heat.

  6. 6

    6. In another skillet, heat 1 tablespoon olive oil over medium heat. Add the remaining red onion, the remaining garlic, and the zucchini. Season with the remaining cumin, 1/4 teaspoon salt, and cook for 5 to 7 minutes until tender but still slightly firm.

  7. 7

    7. Place the cooked red rice in a small saucepan with 1 tablespoon olive oil, the fresh cilantro, the remaining chives, 2 tablespoons lime juice, and a pinch of salt. Warm over medium heat for 3 to 4 minutes, fluffing with a fork.

  8. 8

    8. If you prefer a hotter bowl, you can keep the chicken and zucchini in a preheated oven at 200°F and 95°C for 5 minutes while assembling the bowls.

  9. 9

    9. Divide the red rice among 4 bowls. Top with the cumin zucchini and glazed chicken. Finish with spoonfuls of avocado-chive cream and serve right away.

Chef tips

For deeper flavor, let the chicken brown well before adding the glaze. If the guava puree is very sweet, balance it with a few extra drops of lime. The avocado cream stays greener longer if stored with plastic wrap pressed directly on the surface or in an airtight container.

Substitutions

You can swap the red rice for brown rice. Greek yogurt can be replaced with thick plain yogurt. If guava is unavailable, use mango puree with an extra teaspoon of lime juice to keep the contrast. Chives can be replaced with the green part of scallions.
