Instructions

  1. 1

    1. Preheat the oven to 220 °C / 425 °F. On a baking tray, toss the black beans with 1 tablespoon olive oil, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, and a pinch of salt. Spread in a single layer and roast for 18 to 20 minutes at 220 °C / 425 °F, stirring once, until toasted and lightly crisp.

  2. 2

    2. Meanwhile, place the jasmine rice, light coconut milk, water, and 1/2 teaspoon salt in a medium saucepan. Bring to a boil, reduce the heat, cover, and cook for 14 to 16 minutes until the liquid is absorbed. Turn off the heat and let it rest, covered, for 5 minutes before fluffing with a fork.

  3. 3

    3. In a bowl, combine the ground turkey with half of the minced garlic, half of the lime zest, 1 tablespoon lime juice, 1/2 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon black pepper, and 1/2 teaspoon salt.

  4. 4

    4. Heat a large skillet or griddle over medium-high heat. Add 1/2 tablespoon olive oil and cook the pineapple with the honey for 3 to 4 minutes, turning once, until golden around the edges. Remove and set aside.

  5. 5

    5. In the same skillet, add 1/2 tablespoon olive oil and cook the corn for 3 to 4 minutes until lightly charred. Add half of the red onion, cook 2 more minutes, and transfer to a plate.

  6. 6

    6. Add the remaining 1 tablespoon olive oil to the skillet. Add the seasoned turkey and cook for 6 to 8 minutes, breaking it up with a spatula, until fully cooked. Add the remaining garlic, cook for 30 seconds, then add the remaining lime juice and stir to combine.

  7. 7

    7. In a small bowl, mix the Greek yogurt with the remaining lime zest, 2 tablespoons chopped cilantro, a pinch of salt, and 1 tablespoon water if you want a looser texture.

  8. 8

    8. Fluff the coconut rice and fold in half of the remaining cilantro. Divide the rice among 4 bowls. Top with the turkey, seared pineapple, corn and onion mixture, crispy black beans, and the rest of the fresh red onion.

  9. 9

    9. Finish each bowl with the yogurt sauce, scallions, and the remaining cilantro. Serve warm.

Chef tips

Dry the beans very well before roasting so they crisp up better. For extra contrast, add a few more drops of lime right before serving.

Substitutions

You can swap the turkey for ground chicken. Jasmine rice can be replaced with basmati rice. For a dairy-free version, use plain plant-based yogurt instead of traditional Greek yogurt.
