Instructions

  1. 1

    1. Place the black rice in a saucepan with 600 ml (2 1/2 cups) water and 2 g salt. Bring to a boil, reduce the heat, cover, and cook for 28 to 30 minutes until tender. Turn off the heat, let rest for 5 minutes, and fluff with a fork.

  2. 2

    2. While the rice cooks, mix the maple syrup, zest of 1 lime, 30 ml (2 tbsp) lime juice, 15 ml (1 tbsp) olive oil, 1 grated garlic clove, sweet paprika, 2 g salt, and 1 g black pepper in a bowl.

  3. 3

    3. Pat the salmon fillets dry and coat them with the maple-lime mixture. Let them rest for 10 minutes so they absorb the flavor.

  4. 4

    4. In another bowl, combine the Greek yogurt, avocado, half of the dill, 15 ml (1 tbsp) lime juice, 1 g salt, and 1 finely chopped garlic clove. Blend or mash until smooth and creamy. Set aside.

  5. 5

    5. Toss the red onion with the rice vinegar and a pinch of salt. Massage lightly with your fingers and let it sit while you finish the rest of the recipe.

  6. 6

    6. Heat a large skillet over medium-high heat. Add 15 ml (1 tbsp) olive oil and sauté the zucchini with the cumin, 2 g salt, and 1 g black pepper for 5 to 6 minutes, until golden on the outside and tender inside. Remove and set aside.

  7. 7

    7. Preheat the oven to 220°C / 425°F. Place the salmon on a lightly oiled baking tray or parchment-lined pan and roast for 8 to 10 minutes, brushing once with the tray juices, until just cooked and glossy.

  8. 8

    8. Toast the pumpkin seeds in a small skillet over medium heat for 2 minutes if they are not already toasted, stirring so they do not burn.

  9. 9

    9. To serve, divide the black rice among 4 bowls. Add the seared zucchini, one salmon fillet to each portion, spoonfuls of avocado dill cream, pickled red onion, and toasted pumpkin seeds.

  10. 10

    10. Finish with the remaining dill, a little extra lime zest or juice to taste, and serve immediately.

Chef tips

If you prefer a crispier finish on the salmon, you can place it under the broiler for 1 to 2 minutes at the end, watching closely. The avocado cream is best made just before serving to keep its color fresh.

Substitutions

You can substitute black rice with brown rice if you adjust the cooking time accordingly. Dill can be replaced with fresh parsley for a milder profile. If you do not have rice vinegar, use extra lime juice for the onion.
