Instructions

  1. 1

    1. In a small skillet over medium heat, toast the sesame seeds for 1 to 2 minutes, stirring constantly, until fragrant. Remove and set aside.

  2. 2

    2. In a large bowl, whisk together the rolled oats, all-purpose flour, baking powder, baking soda, fine salt, and ground cinnamon.

  3. 3

    3. In another bowl, whisk the eggs with the milk, 80 g (about 1/3 cup) of the plain yogurt, tahini, honey, vanilla extract, and melted butter until smooth.

  4. 4

    4. Pour the wet ingredients into the dry ingredients and mix just until combined. Let the batter rest for 5 minutes so the oats can hydrate.

  5. 5

    5. While the batter rests, heat 1 teaspoon vegetable oil in a skillet over medium heat. Add the fresh plums, maple syrup, and lemon juice. Cook for 4 to 6 minutes, turning gently, until the plums are tender but still hold their shape and the syrup looks slightly thickened. Keep warm.

  6. 6

    6. Heat a griddle or nonstick skillet over medium heat, about a surface temperature of 350°F to 375°F (175°C to 190°C). Lightly grease with the remaining teaspoon of vegetable oil or a little extra butter.

  7. 7

    7. Scoop pancakes using about 60 ml (1/4 cup) batter each. Cook for 2 to 3 minutes per side, until bubbles appear on the surface and the pancakes are golden. Adjust the heat if they brown too quickly.

  8. 8

    8. Serve the pancakes warm with the remaining plain yogurt spooned over the top, the maple glazed plums and their syrup, and the reserved toasted sesame seeds.

  9. 9

    9. If desired, add a few extra drops of maple syrup when serving for a shinier, sweeter finish.

Chef tips

For a softer texture, let the batter rest for 10 minutes instead of 5. If the plums are very ripe, cook them just long enough so they do not fall apart.

Substitutions

You can replace the plums with peaches or nectarines. The plain yogurt can be swapped for Greek yogurt thinned with a little milk. The honey in the batter can be replaced with the same amount of maple syrup.
