Instructions
- 1
In a medium bowl, mix the rolled oats, all-purpose flour, baking powder, 1 teaspoon of the cinnamon, all of the cardamom, and 1/4 teaspoon of the salt.
- 2
In another bowl, whisk the eggs with the milk, 120 g (1/2 cup) of the plain yogurt, 1 tablespoon of the honey, 1/2 teaspoon of the vanilla extract, the grated carrot, 1 teaspoon of the orange zest, and the melted butter.
- 3
Add the dry ingredients to the wet ingredients and stir just until no dry flour remains. Let the batter rest for 10 minutes so the oats can hydrate.
- 4
While the batter rests, make the orange yogurt: combine the remaining 120 g (1/2 cup) plain yogurt with the remaining 1/2 tablespoon honey, the remaining 1/2 teaspoon vanilla extract, and the remaining 1 teaspoon orange zest in a small bowl. Set aside chilled or at room temperature.
- 5
For the spiced seeds, heat a small skillet over medium heat. Add the oil, sunflower seeds, the remaining 1/2 teaspoon cinnamon, and the remaining 1/4 teaspoon salt. Toast for 2 to 3 minutes, stirring constantly, until fragrant. Transfer to a plate so they do not keep cooking.
- 6
In the same small skillet, add the dates and orange juice. Cook over medium heat for 2 to 3 minutes, stirring, until the dates soften slightly and the juice turns glossy and syrupy.
- 7
Heat a griddle or nonstick skillet over medium-low heat and lightly grease with a little extra butter. If you want to keep the pancakes warm, preheat the oven to 200 °F / 95 °C.
- 8
Pour about 60 ml (1/4 cup) batter per pancake onto the skillet. Cook for 2 to 3 minutes on the first side, until bubbles appear on the surface and the edges look set. Flip and cook 1 to 2 minutes more, until golden and cooked through.
- 9
Transfer the cooked pancakes to the oven at 200 °F / 95 °C while you finish the remaining batter, adding a little more butter to the pan if needed.
- 10
Serve the pancakes warm with the orange yogurt spooned over or alongside. Finish with the warm dates and the spiced sunflower seeds.
Chef tips
Grate the carrot finely so it blends smoothly into the batter. If the batter thickens too much as it rests, add 1 to 2 tablespoons of milk before cooking the last pancakes.
Substitutions
You can swap the sunflower seeds for pumpkin seeds. Honey can be replaced with maple syrup, and orange can be replaced with mandarin for a sweeter profile.
