Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Place the firm red plums on a small baking tray, then add the grated fresh ginger, 25 g (2 tbsp) honey, brown sugar, lemon juice, a pinch of the ground cinnamon, and a pinch of the fine salt. Toss well and roast for 18 to 20 minutes, until the plums are tender but still hold their shape.
- 2
While the plums roast, make the quick granola. In a bowl combine the rolled oats, sesame seeds, 15 g (about 2 tsp) honey, 15 g (1 tbsp) melted unsalted butter, a pinch of ground cinnamon, and a pinch of fine salt. Spread onto a small tray or oven-safe pan and bake at 180 °C / 350 °F for 8 to 10 minutes, stirring halfway through, until golden and crisp. Let cool.
- 3
For the pancake batter, whisk the cottage cheese, eggs, vanilla extract, milk, and 15 g (about 2 tsp) honey in a bowl until combined. It does not need to be completely smooth.
- 4
Add the all-purpose flour, baking powder, the remaining ground cinnamon, and the remaining fine salt. Stir gently until you have a thick, even batter.
- 5
Heat a nonstick skillet over medium-low heat and grease it with the neutral oil and the remaining unsalted butter. Cook in small batches using 2 to 3 tablespoons of batter per pancake, for 2 to 3 minutes per side, until golden and cooked through in the center.
- 6
Divide the warm pancakes among plates. Spoon over the roasted plums and their juices, add a dollop of plain Greek yogurt, and finish with the crunchy sesame granola. Top with lemon zest and serve right away.
Chef tips
If your cottage cheese is very wet, drain it for 10 minutes for taller pancakes. Use ripe but firm plums so they soften without collapsing in the oven.
Substitutions
You can swap the plums for nectarines or apricots. Greek yogurt can be replaced with crème fraîche. For a different finish, use orange zest instead of lemon zest.
