Instructions

  1. 1

    1. In a medium bowl, whisk together the buckwheat flour, all-purpose flour, baking powder, baking soda, fine salt, and sugar.

  2. 2

    2. In another bowl, whisk the eggs with the plain yogurt, milk, melted butter, and vanilla extract until smooth.

  3. 3

    3. Add the wet ingredients to the dry ingredients and mix just until no large streaks of flour remain; let the batter rest for 8 minutes to hydrate.

  4. 4

    4. While the batter rests, heat a skillet over medium heat and toast the sliced almonds for 2 to 3 minutes, stirring often, until golden. Remove and set aside.

  5. 5

    5. In the same skillet, add the honey, saffron threads, lemon zest, lemon juice, and nectarine wedges. Cook over medium heat for 4 to 5 minutes, turning gently, until the fruit is glossy and just tender. Keep warm.

  6. 6

    6. Heat a griddle or nonstick skillet over medium-low heat. If you want to keep the first pancakes warm, preheat the oven to 200 °F / 95 °C.

  7. 7

    7. Lightly grease the griddle with some neutral oil or butter for cooking. Pour about 60 ml / 1/4 cup batter for each pancake.

  8. 8

    8. Cook the pancakes for 2 to 3 minutes on the first side, until bubbles appear on the surface and the edges look set. Flip and cook 1 to 2 minutes more until golden and cooked through in the center.

  9. 9

    9. Repeat with the remaining batter, adding more neutral oil or butter for cooking as needed. If necessary, keep the finished pancakes warm in the oven at 200 °F / 95 °C.

  10. 10

    10. Serve the pancakes hot with the saffron nectarines spooned over the top and finish with the toasted almonds.

Chef tips

Do not overmix the batter; a few small lumps help keep the pancakes tender. Saffron distributes better if you crush it lightly between your fingers before adding it.

Substitutions

You can swap the nectarines for peaches or apricots. The almonds can be replaced with sunflower seeds if you want to avoid tree nuts, although the allergens and dietary tags would change.
