1. Place the millet in a small saucepan with 240 ml (1 cup) water and a pinch of the salt. Bring to a boil, reduce the heat, cover, and cook for 15 minutes until the liquid is absorbed. Remove from the heat and let it rest for 5 minutes; then fluff with a fork and let it cool slightly.
- 2
2. Meanwhile, mix the oat flour, baking powder, cinnamon, and the remaining salt in a bowl.
- 3
3. In a separate bowl, whisk the eggs with the milk, 30 g (1 1/2 tbsp) honey, vanilla extract, melted butter, and half of the orange zest.
- 4
4. Fold the cooked millet and grated carrot into the wet ingredients. Add the dry ingredients and mix until you have a thick, even batter. Let it rest for 5 minutes so the oat flour can hydrate.
- 5
5. For the crunch, heat a small skillet over medium heat. Add the sesame seeds, chopped walnuts, and brown sugar. Toast for 2 to 3 minutes, stirring, until the sugar lightly melts and coats the mixture. Transfer to a plate to cool and crisp up.

6. For the warm orange cream, place the Greek yogurt, orange juice, and remaining orange zest in a heatproof bowl. Set the bowl over a pan of barely steaming water and warm gently for 2 to 3 minutes, stirring, until just warm but not boiling.
- 7
7. Heat a nonstick skillet or griddle over medium-low heat and, if desired, keep it near an oven preheated to 95 °C / 200 °F to hold the finished pancakes warm. Lightly grease the surface with a little extra butter.
- 8
8. Pour portions of batter about 60 ml (1/4 cup) each for every pancake. Cook for 2 to 3 minutes on the first side, until bubbles appear and the edges look set; flip and cook 2 minutes more until golden and cooked through in the center. Repeat with the remaining batter, adding more butter to the skillet as needed.
- 9
9. Serve the pancakes hot with the warm orange cream spooned over or on the side. Finish with the sesame-walnut crunch and an extra drizzle of honey if desired.
Chef tips
If the batter thickens too much after resting, add 15 to 30 ml (1 to 2 tbsp) milk. Grate the carrot very finely for a more delicate texture. Warm the yogurt cream gently to prevent splitting.
Substitutions
You can swap the walnuts for chopped almonds if preferred. Honey can be replaced with maple syrup in the same amount. If you do not have oat flour, blend rolled oats into a fine flour.
