Instructions

  1. 1

Preheat the oven to 220 °C / 425 °F and line a baking tray with parchment paper or lightly grease it.

  2. 2

In a small skillet over medium heat, melt the butter. Add the shallot and cook for 2 minutes until softened.

  3. 3

Add the pear, salt, half of the black pepper, and the cinnamon. Cook for 3 to 4 minutes, stirring, until the pear is tender but not mushy.

  4. 4

Stir in the chopped walnuts and honey. Cook 1 minute more so the filling becomes glossy and slightly thickened. Remove from the heat and let it cool for 5 minutes.

  5. 5

Place one wonton wrapper on the work surface. Put a few cubes of brie in the center and add about 1 teaspoon of the pear filling. Moisten two edges with a little water and fold into a triangle, pressing well to seal. Repeat with all wrappers.

  6. 6

Arrange the triangles on the tray. Brush both sides with the remaining olive oil.

  7. 7

Bake for 6 minutes. Turn the triangles over and bake 6 to 8 minutes more, until deeply golden and crisp.

  8. 8

Remove from the oven and let rest for 2 minutes. Finish with the remaining black pepper and, if desired, a very light drizzle of extra honey before serving.

Chef tips

To prevent them from opening, do not overfill and press the edges while removing any trapped air. If the brie is very cold, it will be easier to cut into small cubes.

Substitutions

You can swap the pear for a firm apple. Walnuts can be replaced with pecans for a slightly sweeter flavor. Brie can be replaced with Camembert, though the flavor will be a bit stronger.
