Instructions

  1. 1

    1. Preheat the waffle iron according to the manufacturer's instructions. If you want to keep the waffles warm, preheat the oven to 95 °C / 200 °F and place a baking tray inside.

  2. 2

    2. In a medium saucepan over medium heat, warm the milk, water, and salt. Once hot, slowly whisk in the instant polenta and cook for 2 to 3 minutes, stirring constantly, until thickened. Remove from the heat and let it cool slightly for 5 minutes.

  3. 3

    3. Stir the grated Parmesan, black pepper, eggs, and melted butter into the warm polenta. Mix well until the base is smooth and evenly combined.

  4. 4

    4. Add the all-purpose flour and baking powder to the polenta mixture. Stir just until incorporated and a thick but scoopable batter forms.

  5. 5

    5. Lightly grease the waffle iron with a little butter. Add portions of batter and cook the waffles for 4 to 6 minutes, or until golden and crisp. Transfer them to the oven at 95 °C / 200 °F while you cook the remaining batter.

  6. 6

    6. While the waffles cook, melt 15 g (1 tbsp) butter in a skillet over medium heat. Add the pears, fresh rosemary, 15 ml (about 3/4 tbsp) honey, and lemon juice. Cook for 4 to 6 minutes, stirring occasionally, until the pears are tender and lightly glazed.

  7. 7

    7. In a small bowl, mix the Greek yogurt with the remaining honey until smooth.

  8. 8

    8. Serve the waffles hot with a spoonful of honey yogurt and the rosemary pears on top. If desired, finish with a little extra grated Parmesan.

Chef tips

Do not let the polenta cool completely before mixing in the remaining ingredients; slightly warm polenta blends better and makes more tender waffles. If your waffle iron tends to stick, grease it between batches.

Substitutions

You can swap the pears for firm apples. Parmesan can be replaced with mild pecorino, and Greek yogurt with thick plain yogurt. For a sweeter note, add a pinch of cinnamon to the pears.
