Instructions

  1. 1

    1. Preheat the oven to 200 °C / 400 °F and line a baking sheet with parchment paper. Brush the paper with 1 teaspoon of the olive oil.

  2. 2

    2. Place the grated zucchini in a clean towel or between kitchen towels and gently squeeze out some of the excess moisture.

  3. 3

    3. In a large bowl, mix the ground chicken, ground oats, drained grated zucchini, shredded mozzarella cheese, egg, onion powder, garlic powder, salt, and ground black pepper until evenly combined.

  4. 4

    4. Divide the mixture into 12 portions. With slightly damp hands, shape each portion into a short rope and join the ends to form little rings. Place them on the prepared baking sheet.

  5. 5

    5. Brush the tops of the rings with the remaining teaspoon of olive oil to help them brown.

  6. 6

    6. Bake for 16 to 18 minutes at 200 °C / 400 °F, until the rings are firm, cooked through, and lightly golden on the outside.

  7. 7

    7. Let them rest for 3 minutes before serving. If desired, cut the rings into halves or quarters for smaller hands.

Chef tips

For a softer texture, grate the zucchini on the fine side of the grater. Damp hands help prevent the mixture from sticking while shaping the rings.

Substitutions

You can swap the mozzarella for Monterey Jack or another mild melting cheese. If you do not have ground oats, blend rolled oats until finely textured.
