1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper. Brush the surface with 1 teaspoon of the olive oil.
- 2
2. In a large bowl, combine the cooked white rice, ricotta cheese, finely grated carrot, beaten egg, breadcrumbs, shredded mozzarella, chives, garlic powder, salt, black pepper, and the remaining teaspoon of olive oil.
- 3
3. Stir well until you have a mixture that is moist but easy to shape. If it feels too soft, add a little more breadcrumbs, 1 tablespoon at a time.
- 4
4. With lightly damp hands, shape 12 small rounded bites or cloud-like mounds and place them on the prepared tray, leaving a little space between each one.
- 5
5. Bake for 18 to 20 minutes at 200 °C / 400 °F, until the bites are firm and golden on the bottom and edges.
- 6
6. Remove from the oven and let them rest for 5 minutes so they set nicely. Serve warm.
Chef tips
For a softer texture, lightly mash some of the rice with a fork before mixing. If you want a more playful look, use a small spoon to make irregular cloud-shaped mounds.
Substitutions
You can replace the ricotta with well-drained cottage cheese. The chives can be omitted. The mozzarella can be swapped for another good melting cheese in the same amount.
