Instructions

  1. 1

    1. Place the rolled oats in a blender or food processor and blend until you get a coarse flour.

  2. 2

    2. Grate the zucchini and carrot. Wrap the grated zucchini in a clean towel or squeeze it with your hands to remove some of the excess moisture.

  3. 3

    3. In a medium bowl, combine the ground oats, baking powder, and salt.

  4. 4

    4. Add the beaten egg, milk, and olive oil. Mix until a thick, even batter forms.

  5. 5

    5. Stir in the zucchini, carrot, chives, and shredded mozzarella cheese. Mix well so all ingredients are evenly distributed.

  6. 6

    6. Let the batter rest for 5 minutes so the oats can absorb some of the milk.

  7. 7

    7. Heat a large nonstick skillet over medium-low heat, about 300-320 °F / 150-160 °C on the cooking surface. Lightly grease with a few drops of olive oil if needed.

  8. 8

    8. Shape mini pancakes by spooning about 2 tablespoons of batter per pancake into the skillet, then flatten them slightly with the spoon.

  9. 9

    9. Cook the mini pancakes for 3 to 4 minutes per side, until golden and set in the center.

  10. 10

    10. Serve warm. If desired, keep them in a preheated oven at 200 °F / 95 °C for 5 minutes to stay warm before serving.

Chef tips

For a softer texture, grate the zucchini and carrot very finely. If the batter seems too loose, add 1 or 2 extra tablespoons of ground oats; if it feels too thick, add a small splash of milk.

Substitutions

You can swap the mozzarella for mild cheddar or a good melting fresh cheese. Chives can be replaced with finely chopped parsley. For a gluten-free version, use certified gluten-free oats.
