Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Wash and dry the potatoes, prick them several times with a fork, and place them on a baking tray.
- 2
Bake the potatoes for 30 minutes at 200 °C / 400 °F, or until tender when pierced with a knife.
- 3
While they bake, heat the olive oil in a skillet over medium heat. Add the finely chopped broccoli and cook for 4 to 5 minutes, stirring, until tender. Add the garlic powder, salt, and black pepper.
- 4
Remove the potatoes from the oven and let them rest for 5 minutes so they are easier to handle. Cut them in half lengthwise and, using a spoon, carefully scoop out part of the flesh, leaving a border to form the boats.
- 5
Place the potato flesh in a bowl and mix it with the butter, cream cheese, milk, and half of the shredded mozzarella until smooth.
- 6
Add the sautéed broccoli to the bowl and mix well to distribute it evenly.
- 7
Fill each potato boat with the potato, broccoli, and cheese mixture. Sprinkle the remaining shredded mozzarella on top.
- 8
Bake the boats again for 8 to 10 minutes at 200 °C / 400 °F, until the cheese melts and the tops look lightly golden.
- 9
Remove from the oven, let cool for 3 minutes, and finish with chopped chives before serving.
Chef tips
For a softer texture for younger children, chop the broccoli very finely and mash it slightly into the filling. You can also serve the boats in smaller halves.
Substitutions
You can swap the mozzarella for mild cheddar or Oaxaca cheese. Chives can be replaced with chopped parsley. If you want a gluten-free version, check that the cream cheese and seasonings are free from traces.
