Instructions

  1. 1

Preheat the oven to 200 °C / 400 °F. Place the halved sweet potatoes on a baking tray, brush them with half of the olive oil, and add a pinch of salt.

  2. 2

Bake the sweet potatoes for 20 minutes at 200 °C / 400 °F, or until tender when pierced with a knife.

  3. 3

Meanwhile, heat the remaining olive oil in a skillet over medium heat. Cook the red onion for 2 to 3 minutes until softened. Add the chopped fresh spinach and cook 1 more minute, until wilted. Remove from the heat.

  4. 4

In a bowl, mix the beaten eggs with the plain thick yogurt, garlic powder, salt, black pepper, and half of the shredded mozzarella cheese. Fold in the onion and spinach mixture.

  5. 5

Remove the sweet potatoes from the oven and let them cool for 3 minutes. Using a spoon, gently scoop out the center of each half to form little boats, leaving enough flesh so they keep their shape.

  6. 6

Fill each sweet potato boat with the egg, spinach, and cheese mixture. Sprinkle the remaining shredded mozzarella cheese on top.

  7. 7

Return the tray to the oven and bake for 10 more minutes at 190 °C / 375 °F, or until the filling is set and the cheese is melted.

  8. 8

Let rest for 2 minutes before serving. Serve warm in child-friendly portions.

Chef tips

For a softer texture for younger children, finely chop the spinach and onion even more, and serve the boats cut into small pieces.

Substitutions

You can swap the mozzarella for Monterey Jack or a mild shreddable fresh cheese. Red onion can be replaced with mild white onion.
