Instructions

1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper.
- 2
2. Place the grated carrot in a clean towel or paper towel and squeeze out some of the moisture.
- 3
3. In a medium bowl, combine the grated carrot, mozzarella cheese, ground oats, egg, plain yogurt, olive oil, chives, garlic powder, and salt until you have a thick, moldable mixture.
- 4
4. Let the mixture rest for 5 minutes so the oats can absorb some of the moisture from the egg and yogurt.
- 5
5. With slightly damp hands, shape the mixture into 16 small sticks and place them on the tray, leaving a little space between them.
- 6
6. Bake for 18 to 20 minutes at 200 °C / 400 °F, turning the sticks halfway through, until firm and lightly golden around the edges.
- 7
7. Remove from the oven and let them cool for 5 minutes before serving so the cheese can set and the sticks hold their shape.
- 8
8. Serve warm on their own or with a mild yogurt dip if desired.
Chef tips
If the mixture feels too wet, add 1 or 2 extra tablespoons of ground oats. For more even shapes, portion the mixture with a measuring spoon before forming the sticks.
Substitutions
You can swap the mozzarella for Monterey Jack or another mild melting cheese. Chives can be replaced with very finely chopped parsley. If you do not have thick yogurt, use mild sour cream in the same amount.
