Instructions
- 1
1. Preheat the oven to 200 °C / 400 °F and lightly grease a baking sheet with 1 teaspoon of the olive oil.
- 2
2. In a medium bowl, combine the ground turkey, ground oats, grated carrot, shredded mozzarella, egg, plain yogurt, onion powder, garlic powder, salt, chopped parsley, and the remaining teaspoon of olive oil.
- 3
3. Mix everything very well with a spoon or clean hands until you get a moist, compact mixture. Let it rest for 5 minutes so the oats can absorb some of the moisture.
- 4
4. Take small portions of the mixture and shape them into elongated bites, like mini rockets or short cylinders. Place them on the baking sheet with a little space between each one.
- 5
5. Bake for 16 to 18 minutes at 200 °C / 400 °F, or until the bites are fully cooked, firm, and lightly golden on the surface.
- 6
6. Remove the tray from the oven and let the bites rest for 3 minutes before serving so they can set and cool slightly.
- 7
7. Serve warm. If desired, pair with soft vegetables or fresh fruit on the side.
Chef tips
For a softer texture, grate the carrot on the fine side of the grater. If the mixture feels too wet, add 1 extra tablespoon of ground oats.
Substitutions
You can replace the mozzarella with another mild melting cheese. Parsley can be swapped for very finely chopped chives. If you do not have yogurt, use the same amount of thick ricotta.
