Instructions
- 1
Preheat the oven to 200 °C / 400 °F. Lightly grease a baking tray or line it with parchment paper and brush it with a little of the olive oil.
- 2
Place the grated cauliflower in a microwave-safe bowl with 1 tablespoon of water. Cook for 2 minutes until slightly softened. Let it cool for 5 minutes, then press it with a spoon or clean hands to remove excess moisture.
- 3
In a large bowl, combine the ground turkey, drained cauliflower, shredded mozzarella cheese, beaten egg, breadcrumbs, chopped chives, the remaining olive oil, garlic powder, salt, and black pepper.
- 4
Mix well with a spoon or your hands until evenly combined. If the mixture feels too wet, let it rest for 2 minutes so the breadcrumbs can absorb some moisture.
- 5
Shape the mixture into 16 small bites, round or oval, and place them on the tray with a little space between each one.
- 6
Bake for 16 to 18 minutes at 200 °C / 400 °F, until the bites are firm, cooked through, and lightly golden on the outside.
- 7
Remove the tray from the oven and let the bites rest for 3 minutes before serving so the cheese can settle and the bites hold their shape better.
Chef tips
For a more playful look, shape them into slightly elongated cloud-like bites. For an even softer texture, pulse the cooked cauliflower for a few seconds before mixing.
Substitutions
You can replace the mozzarella with Monterey Jack or another mild semi-soft cheese. Chives can be swapped for very finely chopped parsley. For a gluten-free version, use gluten-free breadcrumbs.
