Instructions
- 1
Preheat the oven to 200 °C / 400 °F and lightly grease a baking tray or line it with parchment paper. Use 1 teaspoon of the olive oil to keep the bites from sticking.
- 2
Cook the potato in boiling water for 10 to 12 minutes, until very tender. Drain well and mash it in a large bowl until smooth.
- 3
While the potato cooks, place the white fish fillet in a small skillet with a splash of water and cook over medium heat for 4 to 5 minutes, until fully cooked and easy to flake. Let it cool slightly and flake it with a fork.
- 4
Add the flaked fish, grated carrot, shredded mozzarella cheese, beaten egg, ground oats, garlic powder, chopped parsley, salt, and the remaining teaspoon of olive oil to the bowl with the mashed potato. Mix very well until a moist but shapeable mixture forms.
- 5
With lightly damp hands, shape 12 small round or oval bites and place them on the prepared tray, leaving a little space between each one.
- 6
Bake at 200 °C / 400 °F for 15 to 18 minutes, carefully turning them halfway through, until firm and golden on the outside.
- 7
Remove from the oven, let them rest for 5 minutes so the texture sets, and serve warm.
Chef tips
If the mixture feels too soft, add 1 extra tablespoon of ground oats. You can also make fun shapes with a small cutter, as long as you press the mixture together well.
Substitutions
You can use another mild white fish. Mozzarella can be replaced with another mild shredded cheese. Parsley can be swapped for very finely chopped chives.
