Instructions

  1. 1

    1. Preheat the oven to 190 °C / 375 °F and lightly grease a mini muffin pan or small cavities with the olive oil.

  2. 2

    2. Place the ground oats in a large bowl. Add the grated pear, shredded mozzarella cheese, lightly beaten egg, plain yogurt, ground cinnamon, and baking powder.

  3. 3

    3. Mix well with a spoon until you get a thick, moist batter. If the mixture looks too dense, add the water and mix again.

  4. 4

    4. Divide the mixture into the pan, filling each cavity almost to the top. Using the spoon, shape the top slightly into a small boat form.

  5. 5

    5. Bake for 18 to 20 minutes at 190 °C / 375 °F, or until the little boats are set and lightly golden on top.

  6. 6

    6. Remove from the oven and let them rest in the pan for 5 minutes so they can firm up.

  7. 7

    7. Unmold carefully and serve warm or at room temperature, cut into halves if serving to younger children.

Chef tips

For a softer texture, grate the pear using the fine side of the grater. If you want a more defined shape, use small silicone molds.

Substitutions

You can replace the mozzarella with Monterey Jack or a mild melting fresh cheese. Plain yogurt can be swapped for light Greek yogurt, adding a little water if the mixture becomes too thick.
